Fun Night with Friends

Last night was First Thursday in Downtown Boise. Chase and I have wanted to go for the past year and it just hasn't fit into our plans!! We met up with Tracie, Andrew, and Amy at Bonefish (the bang bang shrimp was SO GOOD!) and then went on a little adventure to the chocolate shop.

Tiny Treasures

I have a love for everything tiny. If something can made in miniature, I am ALL over it!

So here's the cool thing. My love for food and tiny things gets to come together with the awesome Mochi, introduced to me by my friend Tracie. They are little balls of ice cream wrapped in a rice flour dough. The cool thing is they are only 100 calories and just the perfect amount of ice cream. A box of 6 is kind of pricey though, probably $7.

Sorry that I'm writing about ice cream at the beginning of fall- I really should have done this during the summer! :P

A Pretty View on Campus

I had to snap a picture if the pretty colors yesterday during my walk on campus. I'm sure the colors will only get prettier as the weather changes more but it made me so excited that I have to share!

Mexican Hot Chocolate

Tonight after our jog, I made Chase and myself a cup of Mexican hot chocolate. Yum! It was really easy and the perfect treat after a little workout.
Mexican Hot Chocolate:
2 cups Milk
1 T cocoa
Sprinkle of cinnamon
1 teaspoon of agave nectar

A One of a Kind Day

Two things:
1.  Stilts- Yep, stilts. I spotted a guy wearing them on campus today.
(I was trying to be really discrete about taking the picture so pardon my lack of amazing photography skills!)

2.  Yielding to helicopters while on a run. Never, ever have I had to do that one before. (I met up with Chase while he had his hour for PT and ran around Gowen with him- which explains the close proximity to Apache's, Black Hawk's, etc...)

Coconut Chicken and Mango Salsa

I have found that the 'fitness' tab in Pinterest has tons of great, healthy recipes!  And also lots of motivation to work out.... pretty much a win-win, right??  So the first experiment was this.  Instead of following the recipe exactly, I made mine with sweetened coconut, and added lots more cayenne pepper to the chicken.  The mango salsa (which according to Tracie at work, I pronounce it "sal-za"- that's how you say it, right?? haha) was great!  It prompted me to make another recipe I have (grapefruit salsa from my "Eat Clean" cookbook... that recipe will be posted in the next few days!). 


Try it!! I promise you will love it.  Let me know how it turns out :)

McCall Part 2

Happy Monday to all!  Chase and I have been cleaning up around the house  the past few evenings because my momma is visiting next week! So excited to have her stay :)  It will be great to have some girl time!
For some reason, when I was posting pictures yesterday of our trips, I couldn't upload all of the McCall pictures.... Is there a picture limit on each post??  Hmmmm.....  But anyways, here are the rest!

Home Again

Though all of our adventures have been wonderful, it feels great to be back home again.  Last week when we got back from our Oregon/California trip, we had one night at home, repacked, and left again  for McCall.  Chase's parents had rented a house near the lake for all of last week and we had a ton of fun!  Lots of hiking, kayaking, and relaxing... Chase broke me into the mountain biking world while we were there (I will admit I am a fan of having my two feet on the ground, but maybe with practice I will become a mountain biker! Oh, did I mention, the trail we went on was rated "extremely strenuous" in the trail guide??? I definitely wish I would have been the one to pick which trail we went on... ha!)  Enjoy the pics!
